  • 1 lb ground beef
  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp coconut aminos or low-sodium soy sauce
  • 2 cups cooked rice
  • 1 tbsp olive oil or avocado oil
  • Salt and pepper

Instructions

  1. Heat oil in a large skillet and cook ground beef until browned.
  2. Add garlic and ginger and cook briefly.
  3. Stir in cabbage and carrots and cook until slightly softened.
  4. Add coconut aminos, salt, and pepper, then stir until everything is combined.
  5. Serve over cooked rice.
