  • 1 tbsp olive oil
  • 1 diced onion
  • 2 diced carrots
  • 2 diced celery stalks
  • 2 cloves garlic, minced
  • 1 can white beans, drained and rinsed
  • 4 cups broth
  • 2 cups chopped kale or spinach
  • Salt, pepper, and dried thyme
